Pumpkin Chocolate Chip Cookies!


I'm baking cookies! Actually, pumpkin chocolate chip cookies! I love making these cookies, such a fall treat! And the recipe is so easy and healthier than regular choc chip cookies, you use half as much butter or oil, meaning you cut out about 900 calories out of your cookies. Not that I am counting calories, but that is a lot of extra butter/oil.

Here is my recipe:

1 C. pumpkin
1C. sugar
1/2 C. butter or oil
1 egg
2C. flour
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
1 tsp baking soda
1 tsp milk
1 Tbs. Vanilla
2 C. choc chips

First preheat the oven to 350 degrees F. Next mix the pumpkin, softened butter (0r oil), sugar, vanilla, and egg. Add the milk and baking soda. Mix in the rest of the dry ingredients. After that is all mixed up, stir in the choc chips. The cookie dough will be wetter than a normal cookie dough.

Drop by spoonfuls 2 inches apart on a greased baking sheet and bake for 10min or until when you press on the top of the cookie a little, it bounces back and is kind of firm.

Then let them cool on wire racks and you have delicious fall cookies! In my case, place them on the wire rack where you have your bread that you just baked, and ate half of for lunch! :-)
